Ingredients
50 g starter
250 g flour
175 g water
2 g salt
Methods
Step 1 -
Feed starter (25g water + 25g flour)
Step 2 -
When the size of the starter doubles, mix all the ingredients and make the dough
Step 3 -
Cover the dough with a wet towel. Wait 30 minutes to 1 hour and do the first fold. Do the other two folds with 1.5 hours in between.
Step 4 -
After the third fold, let the dough rest for 1 hour before pre-shaping
Step 5 -
After pre-shaping, let the dough rest for 30 minutes and then do the final shaping. After you shape the dough, cover it with a towel and put it in the fridge overnight or at least 12 hours.
Step 6 -
Preheat the oven to 220 Celsius for 30 minutes. Boil water and sharpen a knife meanwhile. Prepare two trays in the oven while you preheat. One is for bread and the other is for adding hot water.
Step 7 -
After the oven is heated, take the dough out from the fridge. Score and spray water on the surface.
Step 8 -
Put the dough into the oven. Add boiling water to the tray prepared for adding water. 10 minutes later, open the oven, and add more hot water. Bake at 200 Celsius for another 15 minutes.
