Ingredients
50 g starter
500 g flour
300 g water
10 g salt
Methods
Step 1 -
Feed starter (25g water + 25g flour)
Step 2 -
When the size of the starter doubles, mix all the ingredients and make the dough
Step 3 -
Cover the dough with a wet towel. Wait 30 minutes to 1 hour and do the first fold. Do the other two folds with 2 hours in between.
Step 4 -
After the third fold, let the dough rest for 1 hour before shaping.
Step 5 -
Divide the dough into 5 equal sizes. Shape one by one. In the meantime, preheat the oven to 220 Celsius. Ferment another hour after shaping.
Step 6 -
Put the dough into the oven. Add boiling water to the tray prepared for adding water. 10 minutes later, open the oven, and add more hot water. Bake at 180 Celsius for another 5 minutes.
