- 50g sugar
- 100g softened butter
- 100g self-rising flour
- 2 eggs
- Zest of 1 lemon
- 1 tbsp vanilla extract
- 4 tbsp lemon curd
- Ice-cream
method
method
- Mix sugar, butter, flour, eggs, lemon zest and vanilla extract together until creamy.
- Cook until risen and set away.
- Leave to stand.
- Heat lemon curd and stir in until smooth.
- Pour over the top of the lemon pudding.
- Serve with ice-cream.
