Makes about 6 pancakes. Great for breakfast and even dinner.
Ingredients
100g plain flour
2 eggs (3 if very small)
1tbsp sunflower oil OR 15g melted butter (zap in microwave)
Pinch of salt
Method
Whisk all of the above together to a smooth batter in a jug
Leave to rest for 30 minutes or you can start cooking straight away
Heat a medium sized frying pan on medium heat - once warm, wipe the base with kitchen roll with a bit of butter/oil on
Using a ladle or just pouring mixture into the pan
Cook roughly 1 minute on each side (first few will take longer, but once the pan heats up it will be quicker)
Serve with caster sugar and lemon OR blueberries OR chocolate spread OR anything you fancy
PS: if you have leftover pancakes then you can use them for an easy dinner - fill with bolognese and cover in cheese sauce [similar to lasagne and helpful if you have no pasta!]
