Wash and cut the chicken into 10 pieces. Apply salt, lemon juice and leave to marinate in the refrigerator for 30 minutes.
Heat a non-stick pan. Add the grated coconut and sauté on medium heat for 15-20 minutes till it is light brown. Take off heat and set aside.
Cut the onion into quarters. Add to the pan and roast till it softens and becomes pink and translucent.
Grind the coconut, onion, and ginger-garlic paste with 1/2 cup of water to a fine paste.
Heat oil in a pan, add the xacuti masala, and sauté for about 15 seconds till the masala is fragrant. Add the coconut-onion paste and mix well, cooking for a few minutes to ensure that the flavors are well-combined.
Add the chicken and turn to ensure that the chicken is covered well with the mixture. Sauté for a few minutes over medium-high heat. Cover and cook for 10 minutes.
Add 1 cup of water, coconut milk, salt to taste and bring to a boil. Reduce to a simmer and cook covered for another 25 minutes on medium heat, checking and turning the chicken occasionally. Remove from heat when the chicken is done. Allow standing covered for 15 minutes.
Serve hot.
