It is called 'mutton masala' because all you need to do is bring together all the ingredients, seal the pot and make it 'sit' over a fire! Open up the pot for a delightful mutton curry
Clean the mutton pieces.
Finely slice the onions.
Whisk the yogurt in a large bowl.
Mix all the ingredients, except coriander seeds, mustard oil, and clarified butter, in the yogurt and leave the Iamb chunks to marinate for 1 hour.
Heat the mustard oil in a handi or a pan. Bring the oil to the smoking point and remove it from heat and cool. Heat the oil again on medium heat. Add the coriander seeds and sauté until they begin to crackle. Add the lamb with the marinade. Cover the pot with a lid and seal with a heavy object such as a mortar and pestle. Cook the meat over low heat for about 50 minutes or till the meat is tender.
Uncover, increase the heat to medium and fry until the fat begins to separate. Add 2 cups of water and bring to a boil. Reduce the heat to simmer and cook till the meat is well done.
Adjust the seasoning as per your taste and pour the clarified butter over the meat. Cover and allow to stand for 10 minutes.
Serve hot.

4 Large onions
1 tsp coriander seeds
4 tbsp ginger-garlic paste
2 tsp Kashmiri red chilli
1 cup yogurt
2 tbsp clarified butter
1/2 cup mustard oil
Salt to taste
