Nutrition specialists are engaged with the development of individual nutrition plans considering the client’s specific health, metabolic status, lifestyle, time available for food preparation, work schedule, and personal food preferences. Since the implementation of such nutritional plan by the clients involves their understanding and cooperation, the nutritional specialist needs to provide clarification of all details concerning the recommended diet and it’s expected effects on health in an understandable and convincing way. Importantly, the nutrition reflects not only individual physiological and psychological aspects, but also socio-cultural ones. Therefore, nutritional literacy appears to be an important determinant of the health outcomes. In this regard, the nutritionist should consider the client’s individual health- and nutritional literacy level, and to use appropriate communication strategies during client’s counselling.
The developed HL courses and materials can be implemented in the nutritional science studies after adapting the contents to corresponding nutrition counselling cases. While most courses can be directly applied in the nutrition science education (e.g. Lectures 1, 2, 3, 5, 6, 7, 12, 13, 14) e.g. Lectures 4, 8, 9, 10, 11, 15) need to be revised in the context of nutritionist-client communication. For instance, for training of communication skills the provided scenarios need to be replaced with examples from dietetic practice. In the context of nutritionists’ practice (e.g. nutrition status evaluation, food plan recommendations by specific disease or in health prevention) the Project-based learning and Community-based learning can be used in the education of nutrition science students as well. The developed educational videos are specific for the physiotherapy settings, nevertheless the PEVA-model can be applied in the development of videos containing nutrition counselling examples.
