Squash is one of the “three sisters” (squash, beans, and corn) and has been cultivated for over 10,000 years. It is one of the oldest known harvests that has been used in a variety of dishes all around the world.
There are winter and summer squash varieties, both of which are from the gourd family. Winter squash comes in a variety of colors and shapes. Some common types of winter squash include acorn, butternut, calabaza, delicata, hubbard, kabocha, pumpkin, and spaghetti squash which are all grown in Minnesota.
