SEASONAL FEATURES
Squash has been cultivated for over 10,000 years, and is one of the oldest known harvests in the world. There are a lot of winter squash varieties grown in Minnesota, including butternut, delicata, and spaghetti.
Minnesota is the largest producer of wild rice, which is also known as manoomin in the Ojibwe language. The Dakota and Ojibwe have been harvesting wild rice in the Great Lakes region for centuries, and it remains a sacred food source for Native people.
Carrots are a crunchy, tasty snack that are rich in nutrients and antioxidants. They also come in a wide variety of shapes and colors. Have you ever tried a purple carrot? A yellow one? In Minnesota, carrot season runs from July all the way through October.
These delicious breakfast muffins are a hearty mixture of 51% whole wheat flour and 49% all purpose flour paired with applesauce, carrots, ginger, and Greek yogurt. A healthy, easy breakfast that students are sure to love!
In this fall-themed lesson, students investigate the "Three Sisters" crops (corn, beans, and squash) and explore the benefits of planting these crops together.
