The crunchy, tasty, and highly nutritious carrot (daucus carota) is a deep root vegetable that has some amazing properties. Carrots are rich in nutrients and are especially high in antioxidants. Carrots can come in a variety of shapes and colors. Have you ever tried a purple carrot? This crunchy vegetable has an earthy taste and a refreshing snap to it when eaten raw. Carrots are also great roasted, sauteed, glazed or even incorporated into sweets like Carrot cake. What's your favorite way to eat carrots?
