GREENS

Image of hands picking greens from a garden.

Greens is a broad term for plant leaves eaten as a vegetable, which contain many nutrients. There are many different types of leafy greens which all vary in taste and texture. Popular leafy greens are kale, spinach, collards and romaine lettuce, which are all grown right here in Minnesota.

Minnesota provides exceptional weather for many vegetables including greens. Collards and kale are cold tolerant and will continue to grow and produce new leaves well beyond the first fall frosts. Even after they have frozen, you can harvest and cook the leaves straight from the garden.
