Ingredients (per quesadillas)
refried beans (approximately 2 Tablespoons per quesadilla)
2 tortillas per quesadilla ( 6 inch corn or flour)
shredded cheddar cheese (approximately 1/4 cup per quesadilla)
vegetables (onions, peppers, mushrooms, olives)
salsa
(sour cream optional)
(increase quantity of ingredients accordingly)
Directions
- Use knife to spread refried beans on 1 tortilla.
- Place bean topped tortilla on pan or griddle, refried bean side facing up.
- Turn burner on medium heat.
- Place some cheese on tortilla on top of refried beans.
- Place veggies on top of cheese.
- Sprinkle some more cheese on top of quesadilla.
- Cook until cheese melts (approximately 3 mins.)
- Turn quesadilla with turner.
- Cook 2 more minutes.
- Remove quesadilla.
- Put on cutting board and cut with PIZZA cutter into 4 triangles.
- Top with salsa.
