In a recent Google Group discussion it was requested to be able to have the students' screens appear in alphabetical order when using Class Capture. How the screen appear can be controlled from the Teacher Preferences from File, Settings when the Class tab is selected.
The default setting for Screen Capture is 'random' so as to protect student anonymity. If "Individualize Teacher Handheld in Screen Capture" is selected it will make it easier for a teacher to identify their screen because it will be surrounded by a blue border instead of the black border.
You can activate the Screen Capture from any tab: Content, Class, Document, Review, or Portfolio.
Note: If you already have the Capture Class open from your previous class, then Capture Class will be grayed out.
Once you are viewing the Screen Capture you can change the order by grab and dragging them.
Depending on how big your class is, you may find this is a viable option for sorting the class. I have used this to place student into groups or move them around to match the seating chart.
