South Carolina Mustard Sauce

South Carolina Mustard Barbecue Sauce

makes about 3 cups

1 1/2 cups yellow mustard

1 1/4 cups white distilled vinegar

1/4 cup granulated sugar

1/4 cup brown sugar

1 Tablespoon Worcestershire sauce

1 teaspoon crushed red pepper flakes

1/4 teaspoon ground cayenne pepper

1/2 teaspoon freshly ground black pepper

2 Tablespoons unsalted butter

1 Tablespoon natural smoke drippings or liquid smoke, or to taste

Place all of the ingredients except for the butter and smoke flavor in a medium saucepan and stir to combine. Bring the mixture to a simmer and cook for 15-20 minutes. Remove the pan from the heat and stir in the butter. Add 2 teaspoons of smoke drippings and taste. Add an additional teaspoon or more if needed. Allow the mixture to cool. Store in an airtight container in the refrigerator.
