Cake Stall or Salad Bar Donation
It is tradition for all school families to donate one item to either the Cake Stall or Salad Bar. Both these stalls regularly sell out so donations provided from the wider school allow the stalls to remain open maximising the fundraising. Please Click here for more information. Ka pai!

Stall/Task Coordinators: Edit these lists to suit your needs, then ask parents to put their names on the lists (online and/or print them out).
Parents: When requested, volunteer your help by putting your names next to task on the lists.
Gelato/Frozen Treats
Gelato: For 2026 Jan Willert (school parent) has offered to supply and serve gelato from his ice cream van which will be parked beside the stall. Thank you Jan! Gelatiamo https://gelatiamo.co.nz
Cones : Contact Jan Willert (school parent) to arrange the details, Gelatiamo https://gelatiamo.co.nz (Jan invoices CA directly for ice cream and cones)
The roster includes one duty for supporting Jan in his van with eft pos / serving.
Jan will know what he wants to do for flavours and quantities etc (so historic notes on this moved to bottom of page)
Previous pricing has been $5 single, $7 double, again Jan will have a feel for the selling price and size options
Frozen Juicies:
These are homemade using ice block moulds. Contact Carlene O'Brien (or C4 internal stalls coordinator) for getting the juicies moulds.
In the past the parents doing this will transfer bags of juicies they had made from their home freezers to an available freezer in the school kitchen, slowly building up the stock for 2 or 3 weeks before fair day
Suggested quantity is around 200 maximum. As a guide in 2023 184 Juicies were sold, many more were made with some given away to children who helped out as roaming sellers, rest were put back in freezer
Sold at $2 in past years. Price could be increased to $3 for 2025 if cost of the juice has increased.
A class parent needs to purchase up to 10 x 3 litre containers of Mill Orchard apple juice, or another cheap pure fruit juice. Or consider seeking donations of a quality juice, e.g. several years ago apple juice was donated by Ashley River Organics in return for advertising on the stall and promotion on social media . (Now at Beckenham Sunday Market so may not be as keen now there is no longer an Opawa Market). Barkers concentrate is an option but contains sugar so not as preferred.
Starting with a few frozen berries in the mould results in a nice colour and reduces the volume of juice needed.
Need ice block sticks (use cardboard to keep sticks upright or freeze approx. 30mins first before inserting). Use bowl of hot water to get juicies out easily. Storing in big ziplock bags is by far the easiest way (they don’t stick together, easy to transport).
Freezer: Large chest freezer in cafeteria or cooking room is available for storing the juicies. On fair day 2024 as no ice cream being sold at the gazebo a chilly bin is needed to be lent by a class parent and buy frozen ice to fill it. Then transfer zip lock bags from freezer to chilly bin throughout the day.
All expenses for juicie making are claimed back through the CA reimbursement form.
Signage for Juicies. These sell well if well advertised but can be missed with the ice cream the main draw card. A big sign or maybe a printed photo of juicies on display would help. Roving sellers with big light platters (borrowed from Cooking Room) loaded with juicies another idea if sales slow. Needed two people, one to carry, one for money. Possibly a chilli bin on wheels be useful for mobile selling?
Cup Library
Class 10 is responsible for managing the fair 'cup library' which will be setup in the grassy knoll between the zero waste station aqnd lemonade stall. Talk to the C10 volunteers at the Zero Waste Station if cup cleaning is needed and they will action that. C6 can help also in this if a parent is free.
Lemonade
Lemonade is made and sold at the gazebo with the juicies. A containers can also be given to the class 11 games stall to sell out on the school field (optional for hot days).
As a guide in 2023 around 18 litres of lemonade cordial (see receipe below). This made around 80 litres of lemonade on fair day.
The class 4 stalls coordinator can help with the communication between class 6 (lemonade makers) and class 11 (lemonade selling at games).
Another option is to use students to carry trays of lemonade around the fair and sell to people waiting in queues for food. This method was popular and boosted sales significantly.
Gear Needed:
Start collecting 3L Juice bottles very early!
4-5 citrus squeeze machines
3x 15-Litre Stockpots
15x 3-Litre Juice Bottles
Latex gloves (fair coordinators should be able to supply these)
Big Funnel (for pouring into plastic bottles)
Ladle (unless your pot has a pour spout)
Mixing spoon, measuring cups, measuring spoons, cutting boards, knives
Freezer space to hold all this in until the fair
Ingredients:
20 kg Lemons, or a bit less should be ok to produce the 4 litres lemon juice in recipe below.
- check with class 4 team that this lemon donations are included in the Fair newsletter posts. Good idea to start making a concentrate with lemons as they become abundant on lemon trees through late Winter and into Spring. (If still short on lemons before the fair you will need to buy them and submit the receipt to the Community Association for reimbursement)
8 kg sugar
3 boxes citric acid
Lemonade Cordial Recipe > makes 15 litres lemonade concentrate, multiply by 3 or 4 to make 45 to 60 litres lemonade (water added to taste).
Based on 2023 2 x batches of the cordial are needed. Drinks were an issue fair wide so better to have to much. Left over cordial can be frozen.
4 kg sugar
2 Litres lemon juice
1+1/2 box citric acid
Fill each stockpot with 9 litres of water, add sugar and heat to boiling. Meanwhile, squeeze juice. Once water/sugar boils add lemon juice and citric acid and turn off the heat. Cool the cordial overnight. Pour into plastic bottles next morning and freeze or refrigerate if the Fair is in a couple of days. If you’ve frozen the concentrate, take the bottles out of the freezer the night before.
On Fair Day
Class 4 team will supply Lemonade Sign, gazebo, trestle tables, table clothes and 4 x 20L containers with taps/spigot.
Class 4 team will also supply the cups (cup library) and latex gloves
Class 6 is to arrange bags of ice claim back expenses
Method
In a 20 litre container add around 4 litres of lemonade cordial and about 1/3 of a bag of ice, then fill with water to over 3/4 full. Give a shake to mix, taste and add some more water or cordial as needed.
Also useful for Class 6 to provide .. weights to hold down table cloths if it’s a windy day, Wide mouth funnel for putting ice in containers.
Archive (not relevant for 2025):
Gelatiamo https://gelatiamo.co.nz ) for supply of gelato and cones. Ask Jan if they can supply cones in bulk (2020 - 2 boxes of 300 used). Otherwise seek out another bulk supplier (Supermarket cones are a last resort as create alot of waste)
(Gelato Lab , Pippa supplied gelato in 2022 and is a perfectly fine alternative if Jan can't do it)
It is recommended 3 or 4 flavour's only are offered to get through the queue quicker (less time needed to explain / decide). Vanilla is less popular so limit tubs of that.
As a guide 2023 sold 16 x 5 litre containers of Gelato @ approx 35 scoops per 5 litres
Arrange with Jan Willert (or Pippa) to use their serving fridge . If trailer need to pick up and return on trailer, this is a job for 4 strong people to lift a corner each up on to the trailer.
Small deposit paid in advance (forward quote to CA once confirmed). No returns policy once items left shop so arranged for half of the gelato to be collected with fridge early a.m. or Friday night, then at 12pm the second half collected by a parent (kindy carpark arranged in advance). This gave the option to decline or reduce the second half if sales were slow, bad weather etc.
Signage for Juicies. These sell well if well advertised but can be missed with the ice cream so obviously on display.
