Mom's Apple Cake Recipe

4 cups chopped baking apples (do not dice; peeling is optional. I never peel the apples, though.)

2 cups granulated cane sugar

1/2 cup olive oil or melted coconut oil

1 cup chopped walnuts (optional)

2 eggs, beaten

2 teaspoons real vanilla extract

2 cups all purpose flour

2 teaspoons baking soda

2 teaspoons cinnamon

1 teaspoon non-iodized salt

1. Grease a 9x13 inch baking pan. (I use coconut oil for this.) Preheat the oven to 350 degrees F. OR 325 degrees F. if using a Pyrex pan.

2. In a large bowl, mix together the apples and sugar until thoroughly blended.

3. Stir in the oil, nuts (if using), eggs, and vanilla.

4. In a separate bowl, mix together the flour, baking soda, cinnamon, and salt.

5. Stir the flour mixture into the apple mixture until well blended.

6. Pour the batter into the prepared pan and bake for 1 hour, or until the cake shrinks from the edges of the pan. (Do NOT use a toothpick or similar device to test doneness, or the cake will come out dry.)
