Italian Broccoli Soup
- 1 head of broccoli (1 lb)
- 1/2 cup chopped onion
- 2 carrots chopped fine
- 1 cup diced celery
- 1-2 T. minced garlic
- 1 cup diced ham or other cooked meat
- 3 cups chicken broth
- 3 cups water
- 2 cups macaroni twists
- 1 T. oil
Cook onion, carrot, celery and garlic in oil for 2 minutes or microwave without oil until tender.
Bring to a boil and add broccoli and twists.
Add meat and simmer uncovered for 8 minutes.
Salt and pepper to taster.
*Optional - a dash of hot sauce or crushed red pepper.
