Italian Broccoli Soup

  • 1 head of broccoli (1 lb)
  • 1/2 cup chopped onion
  • 2 carrots chopped fine
  • 1 cup diced celery
  • 1-2 T. minced garlic
  • 1 cup diced ham or other cooked meat
  • 3 cups chicken broth
  • 3 cups water
  • 2 cups macaroni twists
  • 1 T. oil

Cook onion, carrot, celery and garlic in oil for 2 minutes or microwave without oil until tender.

Bring to a boil and add broccoli and twists.

Add meat and simmer uncovered for 8 minutes.

Salt and pepper to taster.

*Optional - a dash of hot sauce or crushed red pepper.
