Chilled Cucumber Bisque
Prep Time - 20 min.
- 3-4 Large Cucumbers
- 2 cups chicken broth
- 2 T. coarsely cut basil
- 1/4 cup butter
- 1/2 t. salt
- 1/8 t. pepper
- 1/2 cup sour cream
- Peel and slice cucumbers. Place in saucepan with chicken broth, salt, pepper, basil and butter.
- Simmer until cukes are tender.
- Pour into blender and whirl until smooth.
- Strain into a large bowl, cover and refrigerate for 3 or more hours.
- Just before serving, add the sour cream.
