Chilled Cucumber Bisque

Prep Time - 20 min.

  • 3-4 Large Cucumbers
  • 2 cups chicken broth
  • 2 T. coarsely cut basil
  • 1/4 cup butter
  • 1/2 t. salt
  • 1/8 t. pepper
  • 1/2 cup sour cream
  1. Peel and slice cucumbers. Place in saucepan with chicken broth, salt, pepper, basil and butter.
  2. Simmer until cukes are tender.
  3. Pour into blender and whirl until smooth.
  4. Strain into a large bowl, cover and refrigerate for 3 or more hours.
  5. Just before serving, add the sour cream.
