Thyme Biscuits

Thyme Butter

1/2c. unsalted butter at room temp.

3 Tbsp. honey

2 Tbsp plus 1 tsp. fresh thyme leaves ( I used dried)

and Biscuits

3 c. selfrising flour

1/4 tsp. black pepper

3/4 c. lemon -lime soda (Sprite)

3/4c. heavy cream

Heat oven 400. Line baking sheet with parchment paper

In small bowl combine butter, honey and 1 tsp. thyme. Cover and set aside

In large bowl, combine flour, pepper and remaining 2 Tbsp. thyme. Make a well in center. Using a fork, gently stir in the soda and heavy cream, mixing just until incorporated (do not overmix)

Drop heaping Tbsp. onto the prepared baking sheet. Bake until puffed and golden brown, 12 to 15 min. Serve biscuits warm or at room temp. with the honey thyme butter.
