1 cup chilled soda water
1 egg yolk
2 tbsp cornflour
125 g flour
1 tsp Baking Powder
canola oil for cooking
Put soda water in a large bowl
Stir in an egg yolk
Combine cornflour, flour, BP and salt
MIx gently into soda water to make a lumpy batter
Heat 4 cm canola oil to 180 degrees celcius
Coat vegetables in batter and fry until crisp
Drain on handy towels
Place on a cooling rack in a warm oven to keep batter crisp
1/2 cup sour cream
2 tsp soy sauce
2 tsp lemon juice
1-3 tsp of wasabi paste (Optional)
salt and pepper
Combine ingredients in a bowl
Season and refrigerate
