1 clove of garlic, chopped
1 cup firmly packed fresh parsley
50 g rocket leaves (or spinach)
1/2 cup extra virgin olive oil
1 tbsp finely grated lemon rind
1/2 cup grated gruyere cheese
Process the garlic, parsley and rocket (or spinach) until coarsely chopped
Add oil and process until just combined
Transfer to a bowl
Sitr in rind and cheese
Season to taste
Makes a cup
100g bag of coriander
125g parmesan
1 cup pine (or other) nuts
2 tbsp lime juice
4 cloves garlic
¼ tsp salt (or to taste)
Combine all to make a paste
Add ½ cup oil
Can be frozen
