Whitebait Fritters

125g whitebait

1/2 cup flour

2 eggs beaten with a splash of water

salt and pepper

1/2 onion finely chopped

1. Rinse whitebait and drain
2. Mix beaten egg into flour
3. Add Whitebait, salt and pepper and onion, mix well
4. Fry in a frypan with some butter
