2 tbsp vegetable oil
1.3 -1.5 Beef brisket
1 tsp salt
2 onions, peeled, halved and sliced
3 cloves garlic, sliced
2 bay leaves
2 tbsp tomato paste
1 tbsp Worcestershire sauce
500ml beef stock
Preheat oven to 160 C
Lightly oil the beef with 1 tbsp oil and season with salt
On stovetop heat lidded ovenproof pan and brown the beef on both sides
Remove from the pan and add the remaining oil, onions, and garlic and cook until softened
Return the meat to the pan along with the bay leaves, tomato paste, Worcestershire sauce and the beef stock
Bring to a simmer, cover with round of baking paper, then cover with a lid and put in the oven to cook for 3 hours, or until the meat is tender when pierced with a knife
Rest the meat for 30 mins before slicing or pulling into shreds.
