Persian Herb and Vegetable Stew

This dish is amazing. Western recipes typically only use parsley and cilantro as garnishes. Persian cooks combine whole bunches of fresh parsley, cilantro, spinach, dill, leek, scallions and fenugreek into a delicious slow cooked stew, flavored with dried Omani limes. This is on top of my list of dishes to eat regularly to stay healthy.

The original recipe has chunks of beef or lamb cooked on the bone. If you are vegetarian, some restaurants serve a vegetarian option. Kidney beans provide protein. I like to ensure I eat only grass fed meat, so typically I buy more bone and less meat, to get the benefit of the bone marrow while staying within budget.
