Breakfast Sausage (Hot)

2 1/2 # Ground Venison
2 1/2 # Ground Pork (loin / shoulder roast)
2 TB Kosher Salt
1 TS Ground Sage
1 TS Thyme
1/2 TS Ginger
3/4 TS Nutmeg
1/2 TS Black Pepper
1 TS Cayenne Pepper
1/2 Cup Water
1 3/4 TS Crushed Pepper

 

Mix venison, pork, seasonings and water. Cook a small patty to test taste.
