Method:
- saute 2 chopped onions and 1-2 chopped stalks celery in 2 tbs oil until fragrant (2-5 minutes)
- add curry powder + sweet spices (eg. cardamom, cumin, nutmeg)
- add 1/4-1/2 cup water or stock, simmer covered for 3 minutes
- add chopped spinach and/or cabbage, if desired — but don't stir
- add 1 cup diced pumpkin and other veges eg. cauliflower, spinach, cabbage
- add 1/2-1 cup water or stock (enough to steam veges)
- simmer covered until done (check every 5 minutes or so)
- add pinch cinnamon a few minutes before end
Notes:
- pumpkin will take about 10 minutes to cook
- add frozen peas about 5 minutes before end, if desired
- for pumpkin and potato curry (yummy, but quite filling):
- first add diced potato (about 2-3 medium potatoes)
- simmer for 5 minutes
- then add pumpkin etc
