Ingredients
- 1¾ cups wholemeal SR flour
- 1 cup castor sugar
- 2 teaspoons baking powder
- ¼ teaspoon salt
- ¾ cup soy milk
- 2 bananas, overripe, mashed
- ½ cup canola or sunflower oil
- 1 teaspoon vanilla
- ¾ cup vegan chocolate chips
To prepare:
- Preheat oven to 180 degrees. Grease and line (or flour) a 9-inch square or round pan.
- With a fork, stir together dry ingredients. Add oil and stir until mixture resembles coarse crumbs. Add bananas, soy milk, and vanilla. Stir until smooth, then fold in chocolate chips.
- Pour into prepared pan and bake on center rack for 40-45 minutes, until cake tester comes out clean.
- Remove from oven, place on wire rack to cool, then sprinkle with powdered sugar and enjoy!
Serves 6.
