Ingredients:
- Dates — chopped, 1 cup
- Brown sugar — 1/2 cup
- Water — 1 cup
- Baking powder — 1 tsp
- Carrot — grated, 1 cup
- Flour — self-raising, 1.5 cups
- Nuts — 1/2 cup (lightly crushed walnuts are a good choice)
- Cinnamon — 1/2 tsp
- Nutmeg — 1/2 tsp
Method:
- Put the dates, brown sugar, water and baking powder in a saucepan on a low heat. Stir together. Simmer for 5 minutes or so, stirring occasionally.
- Put the carrot, flour, nuts and spices in a bowl and mix together.
- Stir in the date and sugar mix.
- Spoon mixture into a loaf tin and bake at 180 degrees C (350 F) for 40 minutes.
- Remove from tin and allow to cool.
