Ingredients (use vegan versions):
- egg substitute equalling 3 eggs
- 2 1/2 cups flour
- 2 cup grated zucchini
- 3/4 cup vegetable oil
- 2 teaspoon grated orange peel (optional)
- 2 cups vegan sugar
- 1/2 cup cocoa
- 1 cup nuts (walnuts, etc.)
- 1 teaspoon salt
- 1/2 cup soy, almond or rice milk
- 2 teaspoon vanilla
- 1-1/2 teaspoon soda
- 1 teaspoon cinnamon
Directions:
- Beat egg substitute, add oil, vegan sugar and vanilla.
- Blend in dry ingredients with milk alternately.
- Bake at 350 for 50 minutes.
