- 2 cups Wholemeal SR flour
- 1/2 cup Plain SR flour
- 3 tsp Baking powder
- 1 1/3 cups Castor sugar
- 1 Egg or vegan equivalent
- 2/3 cup Oil
- 1 1/2 cups Water
- 1 Lemon (juiced, rind grated)
- Poppy seeds (optional)
- Grease and line cake tray(s) (makes two 8x8). Preheat oven to 165°C.
- Grate lemon rind, squeeze juice.
- Combine dry ingredients. Add egg/equivalent plus oil and mix. Add lemon juice and water, grated lemon rind and poppy seeds. Stir well.
- Pour into prepared tray(s). Bake at 165°C for 40 minutes.
