Ingredients

• Leftovers from your tomatoes – skins, seeds, etc.

Directions

1. There’s not much to this, really. The original recipe used a dehydrator, but since I don’t have one, I just threw all my leftovers in a single layer on a cookie sheet and put them in the oven at 170 for most of the evening. Really technical, right? They were in there for probably 5 hours or so, and that dried them out for the most part.
2. After they are dried, scrape them all off the cookie sheet and food process them into tiny bits or powder, depending on how dry they were. I put mine in my little Ninja, and that seemed to do the trick.
3. I stored them in a Ziploc bag in the fridge. You can then use the powder as a seasoning in anything, really. The website I linked to above details how to rehydrate it to create your own tomato paste or sauce, though I haven’t tried that yet.

Adjustments I would like to make: I would like to try turning it into sauce or paste to see how that works.

Overall Satisfaction: It wasn’t too difficult, so my bar is pretty low. I haven’t had much luck dehydrating things in the oven because they all get stuck. In this case, it didn’t matter because I was grinding it all up anyway, so that worked in my favor.

Would I Make it Again? I will keep making it, as we have tons of salsa to make this year, and I hate throwing away food, even tomato skins! So far, I have only added it to salad dressing, but it definitely didn’t do anything bad to it. I will keep testing it out in other recipes.
