Yield: About 24 pop-tarts, on the smaller side
INGREDIENTS
For pastry dough:
2 Cups Whole Wheat Flour
2 Tbsp Baking Stevia (I used some honey)
1/2 Tsp Salt
3 Tbsp Plain or Vanilla Greek Yogurt (I used plain, fat free)
1/2 Cup Unsalted Butter Diced at Refrigerator Temp.
3 Tbsp Skim Milk or Almond Milk (add more if the dough is dry) (I used unsweetened almond milk)
(1 tbsp of olive oil for the top of dough)
For filling: (I made blueberry cobbler filling, strawberry cobbler filling, and brown sugar cinnamon filling, but I have included all the options the original poster had)
· Blueberry Cobbler : 1 Tbsp Fresh Blueberries, 1 Tsp Brown Sugar, 1 Tsp Fat Free Cream Cheese (I made this as is and made a batch replacing the blueberries with strawberries)
· Sweet Peach: 1 Tbsp Peaches Diced, 1 Tsp Brown Sugar (You can use any fruit.
· Brown Sugar Cinnamon- 3 Tbsp Brown Sugar, 1 Tsp Cinnamon 1/2 Tbsp Fat Free Cream Cheese
· Blackberry Jam - Sugar Free Smuckers Jam (Use any flavor)
· Banana Cinnamon- 1 Tbsp Thin Banana Slices, Sprinkle Cinnamon
· Lemon Curd - 1 Tbsp Light Lemon Curd from can (find in baking aisle)
· Apple Pie Oats- 1 Tbsp Quick Oats, 1/2 Tbsp Green Apple Diced, 1/8 Tsp Cinnamon
· Cherry Cream- 1 Tbsp Fresh Cherries Diced, 1/2 Tbsp Fat Free Cream Cheese, 1 Tsp Stevia
· Coconut Almond Cream- 1 Tbsp Shredded Coconut, 1/2 Tbsp Fat Free Cream Cheese, 1/2 Tbsp Sliced Almonds
· Sweet Green Apple- 1 Tbsp Green Apple Dices, 1 Tsp Brown Sugar
· Smores- 1 Tbsp Marshmallow Cream, 1 Tbsp Crushed Graham Cracker, 1 Dark Chocolate Hershey’s Square Chopped
· Dark Chocolate Latte- 1 Dark Chocolate Hershey’s Sqaure Chopped, 1 Tsp Sugar Free Maxwell Coffee, 1 Tsp Quick Oats, 1 Tsp Fat Free Cream Cheese
For the frosting:
2 Cups Powdered sugar
2 Tbsp Meringue Powder (I omitted this)
4 Tbsp Water
Sprinkles of course! (I omitted this)
INSTRUCTIONS
For the pastry dough:
1. In a mixer combine butter, Stevia, yogurt, and vanilla. .
2. Slowly add in the flour and other dry ingredients.
3. Roll up dough and wrap it with plastic wrap.
4. Place in refrigerator until ready to use.
To add the fillings:
1. After all the fillings are prepared take the dough out of the refrigerator and roll out into a thin crust. Cut into 2x2in squares. Before you stack the dough make sure to sprinkle with flour to prevent sticking.
2. Lay a sheet of wax paper onto a baking sheet and spray with pam. Lay twelve of the dough sheets onto the pan. Add the fillings on top. You might have to pick up the dough sheets and stretch them to fit. I had to do this several times.
3. Take the tips of the fork and press down the edges. Working with this dough is kind of like working with clay. The score marks will help the sides stick.
4. After all the Pop-tarts are assembled make sure to write down on a piece of paper the flavors and their placements. It makes frosting much easier!
5. Brush olive oil (or butter) on the top of the dough before popping them into the oven!
For the frosting:
1. Mix powdered sugar, meringue powder, and water.
2. Separate into the number of colors you will use.
3. Add food coloring to each bowl and mix.
4. Put 1 tsp of frosting on each pop-tart and spread it to cover or drizzle it. Add sprinkles, if using.
Adjustments I made: I followed this recipe pretty closely, only really adjusting according to what I had in my kitchen.
Adjustments I would like to make: Next time, I will try some new flavors for the fillings. I happened to have blueberries and strawberries in abundance, so I used those this time. I will probably make them a little bigger next time and be careful not to overfill them. The brown sugar cinnamon ones baked out a little bit, but I think mostly due to the sugars getting melty. I will also remember to mark the flavors next time – now, it’s a fun surprise! ;-)
Overall Satisfaction: Tasty! Liam was willing to eat them, even though they aren’t his standard, out-of-the-box “breakfast cookies.” I like them, anyway. And I froze them, so there’s no real pressure to wolf them down before they go bad!
Would I Make it Again? Yes, but it definitely took some time, and it isn’t super necessary that I have these on hand, so they will probably be a fun project when I am not so busy!
