Adjustments I made: I adjusted the ingredients as noted above for healthier options. As for making them, I ended up just breaking the dough up into ten balls, flattening them with my hands, adding cornmeal on each side, and cooking them on the griddle that way. It’s a trial and error kind of thing. Flatten them a bit when they puff up, but if you do that too much, they will get really flat and dense. If you don’t flatten them, they will end up not being as wide as you want.
Adjustments I would like to make: I have this one pretty much down. Each batch is a little bit different, but they are all good!
Overall Satisfaction: I have these for breakfast almost every morning. They are filling enough so that I’m not starving all morning, but I have made them healthy enough that I don’t feel too bad about it. Put whatever you want on them for a little variety – I enjoy peanut butter, Nutella, or any kind of jam.
Would I Make it Again? Constantly, it seems!
