Adjustments I made: I used olive oil in place of coconut oil/butter because that's what we have in the kitchen. I went with honey instead of stevia for the same reason. Since I don't have almond meal or coconut flour and have no aversion to flour/wheat, I used 3/4 cup oatmeal (ground up in the Ninja) and 3/4 cup whole wheat flour. I used a little less cacao powder than called for because we ran out, but it seemed plenty chocolate-y to us. I used big chocolate chips and made them in mini muffins instead of regular size.
Adjustments I would like to make: Something to make it less sticky. More flour maybe? I run into this problem with banana foods a lot.
Overall Satisfaction: These were a hit. We all tried them and liked them, and the boys kept asking for more.
Would I Make it Again?: Yes. I'm glad to find healthy muffins that the boys will eat and I don't have to feel terrible about eating.
