Egg White Scramble with Spinach & Jalapeno

This is my Protein-Packed Plasma-Donator Scramble! I woke up today and realized I hadn’t really taken in a lot of protein the day before. Since I am always on the border of being too low on protein to donate plasma, I was hoping to boost my levels early in the day. This scramble actually ended up being delicious in addition to protein-packed, which was great. I paired it with a small smoothie that consisted of Greek yogurt, frozen strawberries, frozen bananas, and peanut butter. I probably could have added spinach to that for some additional protein, but I didn’t think of it in the moment. Enjoy!

INGREDIENTS

  • A small amount of olive oil to grease pan
  • 2 egg whites
  • ½ of a can of tuna in water, drained
  • 1 T frozen chopped spinach, thawed
  • 1 tsp chives, chopped
  • ½ of a jalapeno, chopped
  • Pepper to taste

INSTRUCTIONS

1. Grease small frying pan with olive oil – I used my little egg pan.

2. In a small bowl, beat all ingredients together and pour into pan.

3. Cook over medium heat, chopping/stirring as you go to scramble.

Adjustments I made: N/A

Adjustments I would like to make: I may add salsa or chopped kale next time.

Overall Satisfaction: Surprisingly good. I was prepared to add salsa and choke this down as a means to an end, but it was pretty tasty! The jalapeno added some good flavor and spice, and I didn’t feel like I was missing out on anything by removing the egg yolks.

Would I Make it Again? Definitely. This is great for when I have time in the morning to make it. It’s pretty filling and not very guilt-inducing. Low on calories and high on protein? Yes please!
