All NPC races get stat buffs like in AZtweaks, though these buffs are to their base actor values and not via fortify effects so that they won’t drop dead on cell transitions and their health will display properly on their health bar.
The player receives a +30 fortify health effect to reduce the likelihood of getting oneshot by attacks and lower the demand to stack health immediately in the early game to survive, which is also compensated for by weaker stews and less health fortification strength late game. Innate magicka regeneration reduced across the board.

Instead of 40% magic resistance, they get 25% weakness to elemental damage.
Spell cost reduction is increased from 5% to 10%.
Instead of Highborn they get an active spell which transmutes stamina into magicka.
Fortify Magicka by 45 (total 175)

Histskin restores 1 health per second constantly instead of being a power.
They get extra 50 armor rating and Slashing Resist 1 (scales).

Magic resistance unchanged, no more Dragonskin.
They can cook special, more potent foods.

They get 20% stronger offensive spells which cost 15% more (all destruction spells, summon swarms, spectral arrow, absorb, telekinetic spells).
They also possess Ancestral Shield, a reasonably powerful ward which costs stamina instead of magicka and does not scale with restoration. 1h/mage Dunmer will use this ward in combat, beware.

They get good natural stamina regeneration, but are slightly less good at sprinting then they were before.

They get 10% armor penetration.
Movement speed bonus is nerfed to 10%.

Tongue’s Trance is replaced with 12% permanent shout cooldown reduction.
They get immunity to loss of stamina and magicka when hit (which is important, because it is much harder to get immunity to these now) and they don’t slow down when at low health.
Stats: 120/80/120
Melee attacks use more stamina but are much more powerful, no more Berserker Rage.
They get also natural expertise with melee weapons.
Stats: 130/60/110, +20 extra health (for a total of 150)
Melee attacks are weaker but faster
They regenerate 1 stamina per second.
Stats: 110/70/120
They have reduced stamina drain when using bows
can bribe animals with Strange Meat
gain 10 marksmanship expertise.
