This course is perfect for anyone who wants to learn how to sew—whether you’ve tried it in middle school or are starting from scratch. We’ll kick things off by exploring how fashion choices, clothing production, and design influence trends around the world. You’ll also learn how patterns and fabrics are marketed and sold, and how to choose the right materials for your projects. From there, we’ll dive into sewing technology and build the skills you need to create your own clothing and sewn items with confidence.

The students will acquire and apply advanced techniques through samples and the construction of more advanced projects. We will explore techniques for working with different types of fabrics as well as fabric production in the world marketplace. Clothing consumerism will be intertwined throughout the semester. New machine technologies will also be explored.

This course involves the practice and implementation of advanced machine technology and project design work. Students will employ time/cost studies and their implications on project production.

You’ll explore everything from apparel and accessory design to costume design, discovering how ideas move from sketch to runway. Learn to express your vision through hand-drawn and digital fashion illustrations, create trend-inspired mood and inspiration boards, and develop professional technical flats used by real designers to communicate garment construction to manufacturers around the world. You’ll also uncover the history and evolution of fashion illustration, understanding how it continues to influence today’s trends, marketing, and merchandising. By the end of the course, you’ll have a professional design portfolio showcasing your creative process from concept to collection.

In this basic culinary arts course, students will learn and practice food safety & sanitation procedures and basic food preparation skills enabling students to be self-sufficient in the kitchen. Students will learn meal planning principles in the selection, preparation, and serving of meals that meet the nutritional guidelines as established by MyPlate. There is one requirement for this course: a home cooking final. The guidelines of the National Restaurant Association are followed in the concepts taught in this class. This is a prerequisite for Healthy Cooking, Advanced Culinary, and Baking and Pastry Arts.

Integration of the Applied Foodservice Sanitation Certification Course as approved by The Educational Foundation of the National Restaurant Association. Topics include the principles of food microbiology, applied measures for the prevention of food borne illness, and emphasis on working through people to maintain a sanitary foodservice operation. Hazard Analysis Critical Control Point (HACCP) fundamentals and steps for implementation is a key component of the course. Course work prepares students for the ServSafe® certification test and is part of the Professional Management series of the National Restaurant Association. This course is offered through PC NOW and earns one credit with Penn College of Technology.

Are you considering a career in the areas of restaurant, food service, lounge, casino, coffee shop, or catering owner, operator or manager? This is an advanced food and nutrition course with a global perspective. Students will learn about various food cultures in regional and foreign foods units. They will also be introduced to meal planning including a unit on special event planning where they will explore garnishes, appetizers, and specialty desserts including cake decorating. The guidelines of the National Restaurant Association are followed in the concepts taught in this class.

Baking and Pastry Arts will be available in the 2026-27 school year, followed by the 2028-29 school year.
This course will begin with learning the foundations of baking: focusing on the common tools, equipment, ingredients and basic science. Students will study the building blocks of the art by learning formulas, production techniques, and different recipes, and specialty desserts including cake decorating. By the end of the course, students will have compiled a cookbook full of delicious recipes, developed knowledge of different opportunities available in the profession, and gained confidence in their skills. The guidelines of the National Restaurant Association are followed in the concepts taught in this class.
FC185 CHILD CARE AND PARENTING (Grades 9-12)

Child Care and Parenting offers an in-depth study of children and families. This course includes a study of parenting skills, responsibilities and everyday challenges, types of families, reproduction, pregnancy, childbirth, as well as health/safety and child abuse. Students take home a computer baby as a project of this class. Child Care and Parenting is beneficial for both boys and girls in their future role as a parent or those interested in a career with children as a director of a childcare facility, personal or home care aide, or recreation worker.

Are you considering a career in the areas of child, family or school social worker, sociologist, school counselor, or leisure activity counselor? Contemporary Living is designed to give both males and females a realistic look at relationships and their roles in today's society – both within the home and within our global community. Many aspects of daily life will be discussed, including some controversial topics. The course will cover the areas of dating, date rape, love, engagement, marriage, communication, divorce, and aging. The class will examine many issues ranging from dating danger signals to the qualities of a successful marriage.

Are you interested in developing ideas to stimulate learning in a unique way? This course is open to males and females and includes the study and skills to create various projects. This class would also be beneficial to students planning to take the Child Development I and Child Development II -- Preschool classes as there will be projects and activities which could be used in planning preschool lessons. The course will include an evaluation of time management and costing as well as an examination of the “value” of handmade products, both in our society and globally. A community service project will also be included.

Are you thinking of working in childcare, preschool, or elementary school? This class is for you! The course includes studies of child development and learning theories, nutrition, health & safety for children, guidance and curriculum as well as procedures for running a preschool. Students learn to plan activities and lessons, crafts, storytelling and songs with many hands-on activities. This course provides valuable learning and experience needed for a career working with children or those pursuing Early Childhood Education. This course is the prerequisite for Child Development II – Preschool.
FC200 CHILD DEVELOPMENT II -- PRESCHOOL

The first few weeks of this class, students learn how to work and care for children, safety procedures, and writing lesson plans. The majority of the class is hands-on where the students actually run a preschool and are “teachers” for the preschoolers from the community that attend the program three to four times per week.
