Strawberry & Watermelon Summer Salad
Servings - Approx. 8 cups
Ingredients
Salad
3 cups chopped/sliced strawberries
3 cups cubed seedless watermelon
1 english cucumber, peeled & diced
½ cup finely chopped red onion
⅓ cup finely chopped mint leaves
1 cup diced/crumbled feta cheese
Dressing
2 tbsp olive oil
2 tbsp freshly squeezed lime juice
1 tbsp liquid honey
¼ tsp each sea salt & black pepper
Recipe
In a large bowl mix all of the salad ingredients except the feta cheese. Set aside.
In a small bowl whisk together dressing ingredients and pour over salad
Add crumbled feta and toss salad.
Serve immediately & enjoy!
Delicious Summery Chickpea Salad
Servings - Approx. 6 cups
Ingredients
Salad
1 can chickpeas, drained and rinsed
1 ½ english cucumbers, peeled and diced
1 ½ cups grape/cherry tomatoes, halved
¼ cup minced red onion
2 medium avocados, diced
Dressing
2 tbsp olive oil
2 tbsp freshly squeezed lemon juice
1 tbsp balsamic vinegar
1 tbsp fresh minced dill
1 tsp pure maple syrup or honey
¼ tsp each sea salt & black pepper
Recipe
In a large bowl, combine all salad ingredients (careful not to squish the avocado) and set aside
In a small bowl, whisk together dressing ingredients and drizzle evenly over salad.
Mix again and serve. Enjoy!
Fresh Bruschetta Pasta Salad
Serving size: 4 servings
Ingredients
1 lb. conchigliette (shell shaped noodles)
1/4 cup extra-virgin olive oil
1 tbsp. balsamic vinegar
kosher salt
Freshly ground black pepper
1 clove garlic, minced
1 pt. cherry tomatoes, preferably multi-colored, halved
¼ block feta cheese, crumbled
1/4 c. torn basil, for garnish
Recipe
In a large pot of salted boiling water, cook orecchiette according to package directions until al dente. Drain and set aside.
In a small bowl, whisk together olive oil and balsamic vinegar, then season with salt and pepper.
To bowl, add pasta, garlic, feta and tomatoes; toss with dressing to combine.
Garnish with basil and serve. Enjoy!
