How to torte and fill a cake like a pro

The yummiest cakes of all are filled with something besides sweet icing. With a few important tools and tips, you can create delicious tortes, too! For this example, I am using my very favorite chocolate raspberry ganache filling!

1. The first thing you need to do is bake your cake. For the cakes to stack well on top of each other, you need to use pans with straight sides and use bake even strips. Please read this page about using bake even strips

2. The next thing you do is to use your cake leveler (Order Wilton Cake Leveler Here

) to cut the top bump off of one of the cakes. I did not take a picture of that. After you've removed the top bump, adjust the cake leveler so that you can cut that cake in half. 

3. Next put a dot of icing onto your cake board to help the cake stick to it. 

4. Place the bottom layer of the cake you just cut onto the cake board and press it down gently.

5. Use the icing that you will use for the outside of the cake, to make an icing dam around the edge of the cake. This keeps the filling from leaking out. 

6. Next, heat up some Smuckers Seedless Raspberry spreadable fruit in the microwave for about 20 seconds and mix it up so it is easily spreadable. 

7. Use a spoon to spread some of the raspberry all over the cake layer. Then spread the chocolate ganache on top of the raspberry. 

8. Then spread the chocolate ganache on top of the raspberry. If the ganache is firm from being in the fridge. Microwave it for about 20 seconds and stir it. 

9. Next, put the top layer of cake on.

10. Gently press it down with a cake circle.

11. Then make another icing dam and add more raspberry and more chocolate ganache. 

13. Use the cake leveler to cut the second cake in half. You do not need to cut off the top of this second cake unless it is important to you that the top of the cake is very flat. 

14. Put the next layer of cake on and press gently with the cardboard circle. Repeat this procedure so that you have 3 layers of filling and 4 layers of cake. Do not put filling on the top layer.
