Best Gluten Free Chocolate Cake

I have some friends and family who are gluten-free so I have had the opportunity to make a few gluten-free cakes. At first I tried the Namaste Gluten Free Chocolate Cake Mix

. While the devout gluten-free people liked the cake, those of us who are not gluten-free, could not eat the cake. To us, it tasted similar to wet Kleenex. 

This Betty Crocker Gluten Free Devil's Food Cake Mix

  is amazingly wonderful, though. I made this cake for the surprise birthday party for a good friend. All 30 people at the party RAVED about the cake. It was so delicious and no one would have known that it was gluten-free. I iced the cake using a basket weave in my rich chocolate ganache icing. It was the hit of the party! One tip, make sure the butter is melted (not just softened like the directions say) or it does not mix up well and the cake does not rise as much. Also, this mix only makes ONE 8 or 9 inch round cake. So, buy 2 boxes of mix for a regular 2 layer cake.
