Rainbow Cake

I made this cake for my daughter Katie Scarlett's 3rd birthday.

I baked the cake in a Wilton 14 Inch Round Cake Pan

around the pan to help it bake evenly.

After the cake had cooled on a cooling rack

, I cut it approximately in half. (I actually cut LESS than half off of the cake.) Then I cut a small U-shaped piece out of the middle. I set the cake on a Wilton 19-by-13-Inch Cake Board

(2 boards thick) covered in white contact paper

I prepared buttercream icing and colored it using Wilton Icing Colors

. I used Wilton Tip #32 to cover the cake in stars. I stored the cake in the refrigerator in a large white bakery box

.

IMPORTANT TIP: You have to actually BUY purple/violet icing color. Blue and Red to NOT mix to make purple in icing. (It makes gray.)

My little Katie Scarlett grew up to write and illustrate this darling children's book when she was 8 years old, "Princess katie and the Fairy Tea Party". Most little girls would love it! It is available on amazon.
