Food plays an important role in the lives of individuals, families, and societies. This is an introductory course students will explore a variety of different food preparation methods, develop cooking and measuring skills, along with understanding the function of ingredients, healthy eating and current topics in nutrition. Major topics of study Safety and Sanitation, grains, fruits and vegetables, dairy and eggs, breads and cookies. Students will have hands-on experience in the food laboratory as part of this exploratory class.

Are you the next Iron Chef America? Have you ever thought of owning your own restaurant or resort? Do you like to play with your food? The Advanced Foods is for you. In this course you will participate in more advanced food preparation techniques, design a restaurant and menu, create foods in hands-on labs along with enjoying some friendly culinary competitions. Have you ever wondered what it would be like to eat foods from France, Italy, Germany or China? In this class we will also look at Global Foods and create dishes found in other countries to taste test.
Fashion & Interior Design is a specialized course that is divided into one quarter of interior design and one quarter of fashion design. Students will explore topics such as color, principles of design, housing styles, architectural design, and room arrangements as related to interior design. For fashion, students will look at fashion trends, styles, design, marketing, and store layouts. This course is recommended for any student who would like to learn more about decorating personal space or retail merchandising.
The Infancy & Child Guidance class is essential for young men and women with career goals in education, childcare, child psychology, pediatrics, family and human services, or anyone who will become a parent. Students will study the physical, intellectual, emotional, moral and social areas of development, pregnancy, and infant and toddler growth and development. Students will investigate personal attitudes, readiness, responsibilities, and communications skills with children, discipline techniques, parenting styles and issues related to parenting and child guidance. Topics include: proactive strategies, responding to misbehavior, nurturing children, and knowing what to expect from a child. Hands-on activities and professional guest speakers are part of the class.
First Semester Only
Foundations of Early Childhood Education – Part 1 is a course for those interested in a career working with children in a day care setting, a school setting or the medical field to name a few. Students will listen to guest speakers, study child guidance principles, discipline, lesson plan writing, storybooks, creativity, and observe children in a day care setting. At the end of the course, students will have the opportunity to become state certified as an Assistant Child Care Teacher through the Wisconsin Department of Public Instruction and earn articulated technical college credit for the course.

Health, Safety and Nutrition is a continuation of ECE Foundations of Early Childhood Education- Part. This course examines topics related to health, safety and nutrition within an early childhood/ child care setting for children birth through 8 years of age. This course will also include training for Abusive Head Trauma, SIDS, Shaken Baby and Mandated Reporter certifications. At the end of the course, students will have the opportunity to become state certified as an Assistant Child Care Teacher through the Wisconsin Department of Public Instruction and earn articulated technical college credit for the course.

Introduction to Intro to Health Occupations is an introductory class in the fast growing Health Care Field. Students will analyze health care occupations, listen to guest speakers, begin medical terminology, participate in medical issue debates, look at alternative therapy, study ethics in the medical field and study the ten body systems. This course is very beneficial to those interested in enrolling in the Certified Nursing Assistant Class (CNA), and is a prerequisite for taking the class. Students who take this course will also have the opportunity to earn articulated credit with Gateway Technical College.
21st Century Living is a class designed to explore current and future independent living trends. Career exploration, time and financial management, consumer awareness, budgeting, apartment renting, credit cards, communication skills, leisure, and civic involvement will be a few of the topics covered. This course offers students extensive hands-on experiences with simulations and guest speakers as part of the total experience. This course meets the half credit graduation requirement for Personal Finance or 21st Century Living.
