2 cups (250 grams) all purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 cup (1 stick or 115 grams) unsalted room temperature butter
3/4 cup (150 grams ) packed brown sugar (light or dark)
2 large eggs, room temperature
1/3 cup (180 grams) plain yogurt or sour cream
2 cups mashed bananas (about 4 large ripe bananas)
1 teaspoon pure vanilla extract
(Optional) 3/4 cup (100 grams) chopped pecans or walnuts
Preheat the oven to 350°F (177°C). Grease a 9x5-inch loaf pan, put parchment paper, or coat with a non-stick spray and set aside.
Whisk the flour, baking soda, salt, and cinnamon together in a large bowl.
Using a handheld or stand mixer, beat the butter and brown sugar on high speed until smooth and creamy, about 2 minutes. On medium speed, add the eggs one at a time, mixing well after each addition. Beat in the yogurt, mashed bananas, and vanilla extract on medium speed until combines.
With the mixer on low speed, mix in the dry ingredients made on step 1 until no flour pockets remain. Do not over mix. Fold in the nuts if using.
Spoon in the batter in the loaf pan and bake for 60-65 minutes. A toothpick inserted in the center of the loaf should come out clean when it's done. Allow the bread to cool down and enjoy!
