These light and airy marshmallows use maple instead of cane sugar and corn syrup, acting as a tenderizer, sweetener, and stabilizer. They are great with hot coco, topped on a cupcake, folded in a brownie or given as a gift. Marshmallows are very versatile, so enjoy them however you'd like!

Ingredients
- 500 g maple sugar, granulated- 142 g water- 42 g maple syrup, light grade- 33 g gelatin- 100 g water
Instructions
- Dissolve gelatin in second water over medium heat.
- In a pot, cook the maple sugar, first water, and maple syrup to 257˚F.
- Combine sugar and gelatin mixtures in mixer and whip until opaque and aerated. Pipe while warm into molds or spread onto a lined, oiled sheet pan. Cut into cubes once fully cooled and set.
