Maple Gummies

Ingredients


- 10 g citric acid solution (5 grams water, 5 grams citric acid)- 90 g gelatin- 180 g water- 270 g maple sugar, granulated- 70 g water- 30 g sorbitol- 300 g maple syrup, medium grade

Instructions

  1. Bloom the 1st water and gelatin in a sealable bag, making sure the water gets in between all gelatin sheets. Place the gelatin bag in a warm water bath until fully melted, approximately 120-150˚F.
  2. Combine the second water, sugar, sorbitol, and half the maple syrup into a pan and dissolve slowly over low heat. Add the second half of the syrup and cool to 120-150˚F. Add to the melted gelatin solution and cast into silicone molds while still warm.
  3. Allow to cool and set before removing from the mold.
