All In One Maple Coffee Cube

This cube is an inventive and unexpected way to enjoy a cup of coffee. It is comprised of three layers: the darkest layer is the coffee concentrate, followed by a layer of maple cream, and then a layer of rich maple syrup on top. Easily dissolvable in a hot cup of water, this is an all in one short cut for your next cup of joe!

Ingredients


Coffee Concentrated Water - 81 g water- 145 g Instant Coffee powder
Coffee Gel- 42 g gelatin, silver - 160 g coffee concentrated water- 87 g maple sugar, granulated- 63 g coffee concentrated water- 10 g sorbitol- 96 g maple syrup, dark



Cream Gel- 42 g gelatin, silver - 160 g whole milk- 87 g maple sugar, granulated- 63 g whole milk - 10 g sorbitol- 96 g maple syrup, dark
Maple Gel- 42 g gelatin, silver - 160 g water- 87 g maple sugar, granulated- 63 g water- 10 g sorbitol- 96 g maple syrup, dark

Instructions

  1. GELS, bloom the gelatin in the first measurement of liquid within a zip lock bag, be sure that all gelatin leaves are saturated with water. Place the bag in a warm water bath and fully melt the gelatin, approximately 120-150˚F. Combine all ingredients, with respect to the gel you're working on, except for the gelatin into a pan and dissolve slowly over low heat. Add the gelatin when the mixture reaches 120-150˚F, you may have to cool the mixture prior to the gelatin addition. Mix thoroughly before molding.
  2. To assemble, pour coffee gel into a frame mold lined with acetate and set. Attach another frame mold and pour in cream gel and let set. Attach another frame mold and pour in the Maple gel. Let set completely and cut with a hot knife or guitard into 1 inch cubes.

Note:

  • One 1 inch coffee cube will make an 8 oz cup of coffee.
