Ingredients:
For the Chicken Puffs:
2 cups cooked chicken, shredded
1 cup mozzarella cheese, shredded
1/4 cup cream cheese
1/2 cup almond flour
1/4 cup coconut flour
1/2 tsp baking powder
1/4 tsp garlic powder
1/4 tsp onion powder
1/4 tsp salt
1/4 tsp black pepper
2 large eggs
1 tbsp chopped fresh parsley (optional)
For the Gravy:
1 cup chicken broth
1/2 cup heavy cream
1/4 cup butter
1/2 tsp xanthan gum (for thickening)
Salt and pepper to taste
1/4 tsp garlic powder (optional)
1/4 tsp onion powder (optional)
Chicken Puffs:
Preheat the oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
Prepare the dough: In a microwave-safe bowl, combine the mozzarella cheese and cream cheese. Microwave on high for 1 minute, then stir. Microwave for an additional 30 seconds or until the cheese is fully melted and combined.
Mix the dry ingredients: In a separate bowl, whisk together the almond flour, coconut flour, baking powder, garlic powder, onion powder, salt, and black pepper.
Combine ingredients: Add the flour mixture to the melted cheese mixture and stir to combine. Add the eggs and mix until a dough forms. If the dough is too sticky, you can add a little more almond flour.
Add the chicken: Fold in the shredded chicken and parsley (if using) until evenly distributed.
Shape the puffs: Using your hands, shape the dough into small balls (about the size of a golf ball) and place them on the prepared baking sheet.
Bake: Bake for 20-25 minutes or until the puffs are golden brown and cooked through.
Gravy:
Melt the butter: In a medium saucepan, melt the butter over medium heat.
Add the broth and cream: Whisk in the chicken broth and heavy cream.
Thicken the gravy: Sprinkle the xanthan gum into the mixture while whisking continuously to prevent clumping. Cook, stirring constantly, until the gravy thickens to your desired consistency (about 5-7 minutes).
Season: Add salt, pepper, garlic powder, and onion powder to taste.
Serve:
Plate the puffs: Arrange the chicken puffs on a plate.
Add the gravy: Pour the gravy over the chicken puffs or serve it on the side for dipping.
Make sure to use full-fat cream cheese and mozzarella cheese to keep the recipe keto-friendly.
You can add your favorite herbs and spices to the dough for additional flavor.
Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven to keep the puffs crispy.
