INGREDIENTS
1 to 1 ½ cups of shredded cassava (replaces "grated")
Food coloring (optional) (stays the same)
1 cup of sugar (stays the same)
1 cup of cooled pandan-flavored water (simplifies the pandan leaf instruction)
You can make this by boiling pandan leaves in 2 cups of water until it reduces to 1 cup.
OR you can use canned pandan concentrate instead.
OR a few drops of pandan essence mixed with a cup of warm water can also work.
½ teaspoon of lye water (stays the same)
Shredded coconut for sprinkling on top (simplifies "topping")
PROCEDURES
1. Combine Sugar and Pandan Water: Mix the sugar and pandan-flavored water together. Stir well until all the sugar dissolves.
2. Add Cassava and Lye Water: Add the grated cassava to the sugar mixture. Then, slowly add the lye water a drop at a time, stirring well after each drop to make sure everything is evenly mixed.
3. Steam the Mixture: Pour the cassava mixture into a mold or bowl that fits your steamer. Steam the mixture for a while, until it becomes clear and see-through (translucent).
4. Shape and Coat: While the mixture is still hot, use an ice cream scoop or a large spoon to scoop out portions. Quickly roll each portion in the shredded coconut to coat it completely.
