INGREDIENTS
1 ¼ kilos roasted pounded rice (pinipig)
1 kilo pounded rice
1 kilo brown sugar
Shredded coconut
Banana leaves (for wrapping)
PROCEDURES
Mix the dry ingredients: In a big pot, combine the 1 ¼ kilos of roasted pounded rice (pinipig) and 1 kilo of regular pounded rice. Set this mixture aside.
Prepare the coconut: If the coconut isn't already shredded, grate it. Add a bit of water to the coconut, just enough to make it moist but not soupy.
Cook the brown sugar: In another pot, heat up 1 cup of coconut milk on medium heat. Keep stirring until oil starts to appear on the surface. Now, add the 1 kilo of brown sugar and mix well until it dissolves completely. Let this cool down a bit.
Combine everything: Take the cooled brown sugar mixture and mix it thoroughly with the dry ingredients (pinipig and rice) that you set aside earlier.
Wrap it up: Prepare banana leaves cut into squares or rectangles. Spoon the mixture onto these banana leaf pieces. Wrap or fold the leaves to create packets filled with the delicious mixture. Now you can enjoy your Patelakan.
