Brown Rice, Brown Lentils
This recipe was developed for a CS department lunch at Loyola University Maryland. I used a crockpot as that's what I had available. I also needed a recipe that required no attention since I was in class. This soup will take 4 hours on high or 8 hours on low.
Place into pot:
1 Cup Brown Rice
1 Lb. Brown Lentils
3 Medium Carrots Chopped
2 Medium Celery Stalks Chopped
1 Large Yellow Onion Chopped
1 Large Shallot Chopped
1 Head of Garlic Chopped
1 14 Oz. Can Diced Tomatoes
1 Dried Bay Leaf
1 Tsp dried Thyme
8 Pints Water - (see freezer door shelf)
Cook 4 hours on High or 8 Hours Low in Crockpot
When done, add:
1 12Oz. Frozen Spinach
2 Tsp. Salt
1 Tsp. Pepper
1 Tsp. Ground Cumin
